Transferring the wort into the fermenter

Today’s American IPAs are awesome–I love hops like Mosaic and Citra, to the point where I have been starting to hit fruity hop fatigue. The antidote? Make a beer with the most piney, resiny, harshest old school hops I could find.

Warrior’s IPA

  • 12 lb. 2-row malt (Rahr)
  • 1.5 lb. rye malt (Viking)
  • 0.5 lb. crystal 60 malt
  • 4.4 oz. crystal 80 malt
  • 4 oz. rice hulls
  • 1 oz. Warrior hop pellets (15.8% alpha), 60 minute boil
  • 1 Whirlfloc tablet, 10 minute boil
  • 2 oz. East Kent Goldings hop pellets (6.0% alpha), 5 minute boil
  • 1.5 oz. Cascade whole hops (~3.5% alpha), 5 minute whirlpool
  • 2 pkg. Safeale American Ale yeast (US-05)
  • 3 oz. Columbus hop pellets (14.0% alpha), dry hop in keg

Target Parameters

  • 60 minute infusion mash, 154°, no sparge
  • 1.065 o.g., 1.016 f.g., 6.5% abv, 61 IBU, 9 SRM
  • Claremont tap water, augmented with 1 tsp. gypsum

Procedure

  • I mashed in with 7.75 gallons of water at 162°, to hit a mash temperature of 151.7°. After 60 minutes, I vorlaufed and collected 5.75 gallons of runnings with a gravity of 1.055. This equated to a fairly miserable measured mash efficiency of 60%. (After this, I re-aligned my mill, in case that was the problem–I also figure the percentage of rye might be partly to blame, too).
  • I brought the runnings to a boil, adding hops and finings per the recipe. After 60 minutes, I turned off the heat, added the whirlpool hops, let sit for 5 minutes, and then chilled.
  • I transferred the beer to the fermenter, and fermented at 66°.
  • I brewed the beer on 16 February 2019, and kegged on 9 March 2019.
  • Starting gravity was 1.065, and final gravity was 1.011, for 7.2% abv.

Overall Impressions

I served this beer for a party, and it kicked before I could really get a good tasting. I didn’t even get a good picture! It was really popular with the hopheads, definitely delivering on the hop flavors and aromas that I wanted–rich, resiny, and piney. I felt like it needed a bit more time to mature, because the malt flavors weren’t quite there yet. Another few weeks might have helped. Oh well…I guess that means I have to brew this again!

English IPA

I’ve done soooo many American-style IPAs (especially tending towards the citrusy/fruity variety) that I’ve lost sight of what else an IPA can be. I wanted to get back to the style’s roots roots, with an English-style recipe. Creatively, I decided to call it…English IPA. It’s modified from a recipe on the AHA website, which won gold in the NHC during 2016.

English IPA

  • 12 lbs. Maris Otter malt (Bairds)
  • 0.5 lb. biscuit malt (Dingemans)
  • 0.5 lb. red wheat malt (Briess)
  • 6 oz. crystal 120 malt (Great Western)
  • 6 oz. crystal 40 malt (Great Western)
  • 1 oz. Magnum hop pellets (13.2% alpha), 60 minute boil
  • 1 Whirlfloc pellet, 10 minute boil
  • 1 oz. Fuggles hop pellets (5.6% alpha), 10 minute boil
  • 2 oz. East Kent Goldings hop pellets (6.0% alpha), 10 minute whirlpool
  • 2 pkg. Nottingham dry yeast (Lallemand)
  • 3 oz. East Kent Goldings hop pellets (5.0% alpha), dry hop in keg

Target Parameters

  • 1.064 s.g, 1.015 f.g., 6.5% abv, 49 IBU, 11 SRM
  • Infusion mash with batch sparge
  • Water built from Claremont tap water with mineral additions.

Procedure

  • Starting with Claremont tap water, I added 9 g gypsum, 5 g epsom salt, and 4 g CaCl to 4.6 gallons of water with a partial Campden tablet. I heated it to 166° and added the grains along with .5 tbs. of 88% lactic acid, to hit a mash temperature of 152° for 60 minutes. Then, I added 0.7 gallons of water at 185°, let sit for 10 minutes, vorlaufed, and collected first runnings.
  • Next, I added 3.6 gallons of water at 185° with 0.3 tbs. of 88% lactic acid for the sparge. After 10 minutes, I vorlaufed and collected second runnings.
  • In total, I collected 6.9 gallons of runnings with a gravity of 1.055 and 75% efficiency.
  • I brought everything to a boil and added the various kettle ingredients per the recipe. After 60 minutes, I turned off the flame and cooled to 85°. Finally, I transferred to the fermenter (with aeration) and cooled to 66°.
  • I brewed this and pitched the yeast on 7 November 2018.
  • I kegged the beer on 19 November 2018 and added the dry hops.
  • Original gravity was 1.063, and final gravity was 1.015, for 6.4% abv.

Tasting Notes

I drank this beer fairly quickly, because it was so tasty, and unfortunately I kicked the keg before I could do a full, formal tasting. Nonetheless, I kept a few brief notes on my last glass…

The beer had a hop-forward, nicely earthy aroma, with a slight caramel malt character behind that. On the taste, the malt and bitterness were well balanced. Hop character was pretty smooth on the finish, against the caramel malt qualities. Color was a gorgeous medium amber, with a slight haze.

Overall, I give this beer a 9 out of 10. I could perhaps round out the body a bit more (maybe with some oats or flaked barley), but overall this beer is pretty close to exactly what I wanted. The hops in particular are a treat–this feels like something Bilbo Baggins might enjoy next to the fire on a cold night in the Shire.

Countdown IPA

So named because we’re on the countdown to a new baby in the household…gotta brew while I can! This recipe is basically a minor tweak of my Centennial IPA, just mixing up the hops a little bit both for variety and complexity as well as to burn through a bit more of my stash. I also swapped in the US equivalent of the Belgian crystal malts, so that I didn’t have to buy more malt. Finally, I added a touch of Carafa Special II to deepen the color a bit.

Countdown IPA

  • 10.5 lbs. 2-row pale malt (Rahr)
  • 1.75 lbs. Vienna malt (Great Western)
  • 0.5 lbs. 20° caramel malt (Briess)
  • 0.25 lbs. 10° caramel malt (Briess)
  • 1.5 oz. Carafa Special II (Weyermann)
  • 1 oz. Amarillo hop pellets (7% alpha), first wort hop and 90 minute boil
  • 1 oz. Amarillo hop pellets (7% alpha), 15 minute boil
  • 2 oz. Amarillo hop pellets (7% alpha), 10 minute boil
  • 1 oz. Centennial hop pellets (7.6% alpha), 5 minute boil
  • 1 oz. Amarillo hop pellets (7% alpha), 5 minute whirlpool
  • 1 oz. Centennial hop pellets (7.6% alpha), 5 minute whirlpool
  • 1 oz. Ekuanot (HBC 366 aka Equinox) hop pellets (13.6% alpha), dryhop in keg
  • 1 oz. Simcoe LupuLN2 (23.8% alpha) cryohop pellets (23.8% alpha), dryhop in keg
  • 1 Whirlfloc tablet, 10 minute boil
  • 1 tsp. Fermax yeast nutrient, 10 minute boil

Target Parameters

  • Infusion mash to hit target of 149°. Batch sparge.
  • Claremont tap water with RO and salt additions to hit targets of 113 Ca, 22 Mg, 24 Na, 194 SO4, 42 Cl, 207 HCO3, 170 ppm alkalinity, 76 ppm RA.
  • 1.066 o.g., 1.012 f.g., 7.2% abv, 68 IBU, 9 SRM, 5 gallons into fermenter

Procedure

  • My base water for this beer was all Claremont tap water. I added 3.2 g of gypsum, 1.8 g of epsom salts, and 0.6 g of calcium chloride to 4.3 gallons of mash water, along with 45 mL of 10% phosphoric acid. I used the same masses of salts for 4.75 gallons of sparge water, with 50 mL of 10% phosphoric acid there.
  • I mashed in with 4.3 gallons of water at 157.3°, to hit a mash temperature target of 149°. I mashed for 90 minutes; at the end, temperature was down to 145°. I collected the first runnings after a vorlauf, and then added 4.75 gallons of sparge water at around 185°. I let the mash sit for 10 minutes before vorlaufing and collecting the remaining runnings.
  • In total, I collected 7.2 gallons of runnings with a gravity of 1.052, for 78% efficiency.
  • I boiled the hops per the schedule, adding the kettle finings and yeast nutrients appropriately. After the full 90 minute boil, I turned off the heat, added the final hops, whirlpooled for 5 minutes, and began chilling.
  • Groundwater is pretty warm this time of year, so I could only chill the beer down to around 85°. I transferred to the fermenter and then let it chill overnight (~10 hours) down to 66°. I pitched the yeast, and things had begun to take off within 18 hours.
  • Starting gravity was 1.064. I brewed the beer on 14 July 2017 and pitched the yeast early on the morning of 15 July 2017. I’ll be fermenting at 66°.

Beer Tasting: Ophidia IPA & CA IPA

Both of my recent IPA’s are long-gone (Ophidia IPA first, and CA IPA most recently), but I hadn’t gotten around to posting the tasting information. So, this post is a double-header!

  • The Basics
    • O.G. = 1.055; f.g. = 1.012; 5.6% abv; 6 SRM; 52 estimated IBU
  • Aroma
    • Beautiful tropical fruit aroma–guava notes are really prominent (I feel a bit silly typing out this kind of pontification, but it’s seriously there!), and a bit of citrus is behind that when it is first poured. As the beer warms up, the purported blueberry associated with Mosaic hops comes forth. It’s a very hop-forward aroma, covering up the malt.
  • Appearance
    • Gold color, moderately hazy, with a low and persistent off-white head.
  • Flavor
    • Hop-forward once again, as you would expect for an IPA. The bitterness is clean and persists nicely from first sip to the finish. Any hop flavor is vaguely tropical and citrusy. The malt is clean, ever-so-slightly-sweet, and in the background.
  • Mouthfeel
    • This is a moderately dry and fairly light-bodied beer, carbonated as appropriate for the style. The dry finish lingers pleasantly on the tongue.
  • Would I brew this again?
    • Hmm…this is in the category of “pretty good, but not life-changing.” It hits nicely on most notes, but I think it might fall victim to “tropical hop burn-out” in the wake of many citrus/fruit-bomb IPAs and pale ales that I’ve done over the past year. I didn’t quite hit my marks for final gravity due to the mash being a bit too cool, but I’m honestly not sure if that’s a totally bad thing. The aroma is absolutely delicious–the Mosaic and Citra combo play together beautifully. This is a very drinkable beer; probably too easily drinkable! I really like it, but it is just missing something very minor that I can’t quite place in the flavor. Ah well!

CA_IPACA IPA

  • The Basics
    • O.G. = 1.060; f.g. = 1.009; 6.7% abv; 6 SRM; 63 estimated IBU
  • Aroma
    • Slightly phenolic, which overpowers any hop aroma. There is maybe a slight piney hint, but that’s about it.
  • Appearance
    • Gold beer with a moderate haze. The off-white head forms a persistent blanket over the surface of the beer.
  • Flavor
    • Pear/apple notes (probably from the yeast), with a slightly herbal/spicy character behind that–perhaps even a bit phenolic. I attribute this to a brief lapse with the fermentation chamber–the freezer side accidentally got unplugged, so the temperature peaked at 73 or 74 degrees. It’s actually rather close in many ways to what my first, non-temperature-controlled batches tasted like.
  • Mouthfeel
    • Medium-dry body, moderate carbonation.
  • Would I brew this again?
    • Maybe? Unfortunately, enjoyment of this beer is really ruined by the slight bump into high temperatures early in fermentation. I’m willing to try this temperature and technique again, though.

Ophidia IPA

I “needed” to brew another IPA, and was in the mood for something a bit lower in alcohol. The November 2014 issue of Brew Your Own magazine had a clone recipe for Suicide Squeeze IPA, from Fort George Brewery. It was a nice session-ish beer (4.7% abv), and the recipe called for stuff I had pretty much entirely on hand. With just a few minor modifications, my recipe was all set! The name for my personal take on this (Ophidia) refers to a scientific name for snakes, because the original Fort George product had a snake on the label for the can.

Ophidia IPA

  • 8 lbs. 3 oz. 2-row malt (California Select, Great Western Malting Co.)
  • 1 lb. Munich I malt (Weyermann)
  • 0.5 lb. caramel 40° malt (Briess)
  • 0.5 lb. flaked oats
  • 0.25 lb. Carafoam malt (Weyermann)
  • 0.45 oz. Warrior hop pellets (15% alpha), 60 minute boil
  • 1 oz. Citra hop pellets (14.1% alpha), 5 minute boil
  • 1 oz. Mosaic hop pellets (11.3% alpha), 5 minute boil
  • 2 oz. Mosaic hop pellets (11.3% alpha), 5 minute steep
  • 1 Whirlfloc tablet, 10 minute boil
  • 1 tsp. Fermax yeast nutrient, 10 minute boil
  • 2 oz. Mosaic hop pellets (11.3% alpha), dry hop in keg
  • 1 oz. Citra hop pellets (14.1% alpha), dry hop in keg

Target Parameters

  • 156° mash, 45 minutes
  • 1.053 o.g., 1.019 f.g., 4.4% abv, 52 IBU, 6 SRM, 5.5 gallons into the fermenter

Procedure

  • 24 hours in advance of brewing, I made a 1.5L starter. This is the second use for the culture–I set aside 0.55L for later use.
  • My water was 5.25 gallons of Claremont water mixed with 3 gallons of RO water and 5 g of gypsum. For the strike/first round of sparge water, I used 1.5 gallons of RO and 3.25 gallons of Claremont water, with the gypsum added directly into the mash tun. For the rest of the sparge water, I used 1.5 gallons of RO with 2 gallons of Claremont tap water.
  • I mashed in with 4.75 gallons of water 167°, to hit a mash temperature of 153°. This was a bit below my target, but I figure I’ll roll with it. I did only a 45 minute mash, before vorlaufing and collecting the first runnings.
  • I sparged with 3.5 gallons of water at 185°, to hit a mash temperature of 168° for the mash-out.
  • I collected 6.75 gallons of wort at a gravity of 1.044, for 77% efficiency.
  • I started the boil, and added the various ingredients per the schedule. After a 60 minute boil, I chilled the wort to 68° and pitched the yeast.
  • Starting gravity was 1.055, slightly above my target but not by too much.
  • I brewed this beer on February 6, 2017, and fermented at 66° for the first four days. Then, I removed it from the fermentation chamber (to make room for another beer), and fermented it at ambient room temperature with a heating pad beneath the carboy, to maintain ~68° in the fermenter.
